Fall is here!

Fall is traditionally the time of year that we have beef processed, and we have several cows available. We have beef available by the individual cut or in bulk, and it will be ready in time for Thanksgiving. We also have traditional country sausage, Italian sausage, and various cuts of pork available. Whole-Hog Sausage with Spaghetti

After having a lot of positive feedback in response to our whole-hog sausage, I cooked some the other night and took this snapshot to share. It turned out well. I cut the sausage into approximately 1 inch lengths, grilled them lightly in a small amount of olive oil, wiped up the small amount of excess grease, and simmered them in Classico Spaghetti sauce with a bit of added black pepper and basil. I served it on some Healthy Harvest spaghetti, and we really like how the simple recipe turned out.



Raleigh Tour d' Coop and Shallotte Farmers' Market

We have been staying busy lately selling our meat each week at the Shallotte Farmers' Market, baling wheat hay, and taking care of everyday business on the farm. Additionally, a lady on Raleigh's Tour d' Coop last Saturday who we also have sold pullets to in the past invited us to come by her house and set up a table to promote our backyard chicken flocks and other products. It was a lot of fun, and Wesley and I got to talk to a ton of people about chickens, farming, and a good bit of everything in between. In addition to the Tour d' Coop we have been selling at the Shallotte Farmers' Market for the last three weeks, and it has been a good experience getting to know the folks there and having the chance share our products. I took a few cell phone pictures our first weekend there, and thought you'd like to take a glance and some of the goings on.

A busy Saturday is coming up

Wesley and Bethany will be taking chickens to Raleigh on Saturday and talking with folks on the Tour de Coop, and Edward will be selling meat at the Shallotte Farmer's Market. We have a good supply of meat available and we have plenty of pullets on hand, so if you are looking for beef, chicken, pork, or pullets for a home flock, we will be happy to help you.

May 1 will be the beginning of farmer's market season for us in 2010. We will be attending the market in Shallotte and we have plenty of nice products to sell. If you can, come check us out.

Chicken Deliveries 3-17, 4-24, 5-15

We are sold out of pullets for our March 27 delivery to Raleigh, but we have plenty of meat available and we will be making more deliveries on April 24 and May 15. Our waiting lists are growing, so it is best to place your order early.

Roasted Chicken

After having chickens processed last week at Williamsburg Packing in South Carolina, we wanted to cook one. Wesley roasted one for us tonight, and we really like the way it turned out. In honor of this, here is a picture I took of the goods. :)

Beef and Chicken will be available this weekend.

We will have whole chicken and pieces along with beef by the individual cut available starting Saturday. If you are interested, please email or give Wesley a call at 910-874-3175. If you are looking for barbecue pigs or any specific cuts of pork, let us know. We will be having hogs processed in the near future. We also have about 20 16-week old pullets remaining for 12 dollars each. We have a good supply of younger ones in the "pipeline," but if you are looking for some that will be laying soon these would be ideal. They are absolutely beautiful. About half are Buff Orpington and the the rest are Rhode Island Red.

We are now making feed!

After struggling to find feed that is free of animal by products locally, we have started to make our own. We have a hammer mill that was purchased by my great-grandfather in the early 50's but was idle for close to 50 years. We were able to get it in tip-top shape with only a little cleaning and oiling. We can now formulate our own custom rations at a significantly lower cost. This development also allows us to support our local economy more. We grow some of our own corn but we currently don't have enough production and storage capacity to meet all of our needs, so we have to buy a large portion of our corn. We can now purchase it from fellow farmers in our community instead of having to use corn that is hauled long distances and the money stays in our local economy. If any of our customers are interested in buying feed from us or having a custom formulation made, we will be glad to supply it.

Pullet/Meat Delivery Dates

We have already established two dates to deliver 5 week old pullets to Raleigh. We will be coming on March 27 and April 21. In March, we will have Buff Orpington, Barred Rock, and Rhode Island Red pullets. In April, we will have those breeds plus Silver Laced Wyandottes. The price will remain 5 dollars each plus a 10 dollar per order delivery fee. We will also have sausage, chicken, and beef. No deposit is needed, but quantities are limited and we are taking reservations. Please contact us for meat availablility. 910-874-3175

Updates

We will be glad when the cold, wet weather leaves us, but we are still very busy this winter. We have sausage available on a continuing basis and we have started a beef waiting list.
