We are selling them for 8 dollars. Most are Black Australorp and White Leghorn, and we have smaller amounts of a few other breeds. The fall is progressing nicely. We are running the sawmill for the first time in a while today and preparing to plant rye for fall pastures. We recently purchased two very nice breeding sows and our pork expansion is continuing. We are also expanding our meat chicken production. It turned out well.  I cut the sausage into approximately 1 inch lengths, grilled them lightly in a small amount of olive oil, wiped up the small amount of excess grease, and simmered them in Classico Spaghetti sauce with a bit of added black pepper and basil. Additionally, a lady on Raleigh's Tour d' Coop last Saturday who we also have sold pullets to in the past invited us to come by her house and set up a table to promote our backyard chicken flocks and other products.  It was a lot of fun, and Wesley and I got to talk to a ton of people about chickens, farming, and a good bit of everything in between.  In addition to the Tour d' Coop we have been selling at the Shallotte Farmers' Market for the last three weeks, and it has been a good experience getting to know the folks there and having the chance share our products. We have a hammer mill that was purchased by my great-grandfather in the early 50's but was idle for close to 50 years. We were able to get it in tip-top shape with only a little cleaning and oiling. We can now formulate our own custom rations at a significantly lower cost. This development also allows us to support our local economy more. We grow some of our own corn but we currently don't have enough production and storage capacity to meet all of our needs, so we have to buy a large portion of our corn. We can now purchase it from fellow farmers in our community instead of having to use corn that is hauled long distances and the money stays in our local economy. We will be coming on March 27 and April 21. In March, we will have Buff Orpington, Barred Rock, and Rhode Island Red pullets. In April, we will have those breeds plus Silver Laced Wyandottes. The price will remain 5 dollars each plus a 10 dollar per order delivery fee. We will also have sausage, chicken, and beef. It is whole-hog, which means that it contains meat from the entire hog, not just the "left-overs" and variety meats. As is the case with all of our animals, the hogs were produced without antibiotics, hormones, or drugs. The sausage is all-natural with no preservatives, MSG, or artificial ingredients. The remnants of Tropical Storm Ida dropped six inches of rain not long ago, and we are getting a good soaking as I write this. This is not the ideal time to have a 4 day old calf, but a heifer was born this weekend on a cold morning and is doing great. Pregnant and lactating cows can have a hard time in the cool seasons, but the heirloom corn silage we use provides good nutrition during the gap between warm and cool season pasture so that calves born in less than perfect weather can still thrive. We say that we "raise" animals and that word is appropriate I guess but it is really Nature that does the work. Wet periods in cold weather can mean problems for hogs raised on pasture, but we are fortunate to have our hog pasture in a place where they can stay dry and have protection from the wind. I have visited farms where hogs were in several inches of mud with no dry place, and I feel that is not humane at all. We have a building that they can go into, but they seem to prefer the shelter of the trees and the wallows that they make for themselves in the woods. We are anxiously awaiting the sausage that will be ready this Friday. We can't wait to try it. Good quality meat is always something to enjoy, especially when you have the satisfaction of it coming from your own animals. We will have individual cuts of beef available December 12. We have built a larger and nicer hog pasture that is wooded with oak trees. (hogs love acorns) Hopefully we will have pork in early 2010. This is an important step for us, because it means that we can now sell inspected beef by the individual cut. We will have a price list soon and we will have meat ready for Thanksgiving and Christmas. All beef will be inspected and vacuum packed to preserve quality. We will still offer quarters, halves, and whole cows to those interested. The variety dates to the mid 19th century but has performed well.  The stalks are extremely tall, and we've been impressed with the yield and quality.  We understand that a lot of our customers want meat that is fed with non-GMO feeds, and this is a heritage plant that seems very viable for quality silage. On a more positive note, we will be planting corn in a few weeks and this year we are switching to an heirloom open-pollinated variety called Boone County White. It dates to the mid 19th century and grows very tall, so it should yield a lot of silage. We use a good quality starter feed of approximately 20% protein until chickens reach about 16-18 weeks of age and switch them to a layer ration with oyster shells offered free choice. There are many quality brands available, and the brand you choose will probably depend on which feed dealer is most convenient. Since starter/grower and layer feeds are complete rations which are scientifically formulated to meet the dietary requirements of poultry, we advise against the use of scratch feed, as it effectively "dilutes" the nutrients present in a complete feed. Nutritional deficiencies can manifest themselves in many ways, often with very detrimental results.&lt;br /&gt;&lt;/p&gt;Questions have also arisen about the feeding of vegetable scraps, and we have found this to be a good practice. When birds are free-ranged, we recommend offering feed, especially to laying hens. In an area with plenty of natural forage, it is quite possible for chickens  to perform very well without supplemental feed, but if there is any doubt about whether or not your chickens can obtain enough nutrition from nature, feed should be offered. We will process them at approximately 5 pounds live weight and the price will be 10 dollars each. We are happy to process them so that they comply with religious dietary standards if necessary, and the chickens can be cut up for an additional $1 each. Discounts will be available if you would like to help dress your birds. No deposit is required, and we will notify you 2 weeks in advance of the day we process them so that you can pick them up fresh. We can also freeze them if you would like. There is no minimum order, and when we receive orders for at least 25 chickens, we will order chicks. They will be ready to process in approximately 7 weeks. Our cattle are fed a mixture of forb grass, cereal rye grass, corn silage, kudzu, hay, and turnips.  The turnips we use are fed as brassica, a popular forage crop in Europe.  We rotate what the cattle are fed by what is in season and is available locally.  Since cows are natural born grass eaters, we aim to feed them as much forage and grass as is possible in our area resulting in a forage grown and finished beef with less fat and a better flavor (as our customers have reported and we have tasted ourselves).  Our meat chickens are free-range, and our starter pullets are fed Southern States Chick Starter.  Our cage-free layers are fed Southern States Layer Pellets.  All of our feeds are balanced feeds that are free of animal based proteins. Bulk beef is priced at $2.50 per pound hanging weight plus processing charges. Hanging weight is the weight of the cow after it has been butchered and each side of meat is weighed. Due to the removal of bones when cutting the meat for packaging and the loss of moisture during aging, the final weight will generally be 75-80% of the hanging weight.  Each cow is different so these numbers may vary slightly from animal to animal.  A customer can purchase ¼, ½, or a whole cow to be processed. As soon as we have enough orders for a whole cow, we take one to the plant. We accept deposits of $100.00/quarter when orders are placed and collect the balance when the customer receives the meat. Our animals are processed at Williamsburg Packing, a USDA inspected facility.  The rate that Williamsburg charges for processing is 75 cents per pound.  This charge includes aging, packaging, and wrapping to the customer's specifications plus a nominal butchering fee for the whole animal. Based on previously processed animals, the final price per pound of beef in your freezer is about $4.00/lb.  &lt;/span&gt;&lt;span style=";font-family:times new roman;font-size:100%;"  &gt;As stated before, every cow differs so this price varies slightly per animal.  &lt;/span&gt;&lt;span style=";font-family:times new roman;font-size:100%;"  &gt;This price includes all the cuts of beef from filet mignon to top quality, lean ground beef.  If you were to buy similar cuts of meat at the grocery store, your costs would be significantly more.  Additionally, due to the way we are able to raise our animals, we feel that we have an advantage in both price and quality. All beef is vacuum packed and Federally inspected&lt;/span&gt;&lt;span style=";font-family:times new roman;font-size:100%;"  &gt;.   To estimate freezer space, an approximately 700-800 pound cow will be about 100-125 pounds hanging weight per quarter, and a quarter will fill about 3 large paper grocery bags. . We raise and sell chickens for layers and for meat, cattle, cage-free eggs, and seasonal produce. Our chickens are fed a diet containing no animal by-products, and our cattle are produced naturally without hormones or antibiotics. We provide chickens for home and farm laying flocks and currently have layer pullets, fresh chicken, cage free eggs, beef cattle. and seasonal vegetables available. Most of our customers are families who are interested in having fresh, healthy food from a local source. Wesley is a high school agriculture teacher and farmer with a BS in Poultry Science from NCState, and Bethany is an art teacher, a photographer, and a part-time writer for a local news website.  Edward is an agronomist with a BS in Soil Science from NCState as well.  We enjoy producing safe, natural food and servicing local customers.
